I’m Victor Hernandez — Waco-native, butter-raised, and wholly captivated by the quiet magic of flour, fire, and flavor.

Fox & Co. Bakery began as a whisper — the kind of idea that lingers like the scent of something warm just pulled from the oven. I spent 7.5 years at Magnolia, three of which I devoted to developing recipes that found their way into people’s homes, hearts, and daily rituals. While there, I pursued my culinary training at the Auguste Escoffier School of Culinary Arts, sharpening my technique while nurturing the deeper craft behind it all.

From there, I stepped into the role of Culinary Director at
Di Campli’s Italian Ristorante
, where old-world tradition was the canvas and I had the freedom to add something daring and new. That balance — the reverence for heritage, the hunger for invention — is the tension that defines my work to this day.

Fox & Co. isn’t just a bakery. It’s a living archive of flavor and feeling — a collection of edible vignettes wrapped in parchment and shadow. You’ll find flaky croissants paired with hand-crafted cakes, sweets laced with memory, and an ever-present wink from our dapper fox muse.
